Scrumptious Slow Cooker Beef Stroganoff: A Stupid Simple Supper

This is one dish my family really enjoys. Although the recipe calls for stew meat, I have used chicken, ground turkey and leftover steak. My mother use to make this with ground beef when I was a kid.

We layer this slow cooker stroganoff over rice the majority of the time, although my husband likes egg noodles every now and then. I like using the rice because I can cook it in the last 30-minutes using my rice cooker which also steams vegetables at the same time.

If you do not have a rice cooker I highly recommend the Aroma Housewares Professional Rice Cooker. This rice cooker also doubles as a vegetable/egg steamer, a slow cooker, and it sautés on top of cooking rice, quinoa, oatmeal and other grains to perfection. I am not lying when I say that we use this rice cooker every day.

Ok, on to the good stuff. I gather all the ingredients while the meat is browning.

Then I throw the ingredients in the slow cooker and I forget about it – until I can smell the savory aroma later in the day.

  • Slow Cooker
  • Measuring Cup

  • Ricer Cooker or boiling pan

Ingredients
  

  • 1.5 lb Stew Meat cut into 1-inch or smaller pieces
  • 8 oz Sliced Mushrooms
  • 3 cups Rice
  • 1.5 cups Beef Broth
  • 8 oz Sour Cream
  • 1/3 cup Dry Cooking Sherry
  • 1/2 cup All Purpose Flour
  • 1/4 cup Diced Onion
  • 1 tbsp Minced Garlic
  • 1/2 tsp Dried Oregano
  • 1/8 tsp Dried Thyme
  • 1 Bay Leaf
  • 1/4 tsp Salt
  • 1/4 tsp Black Pepper

Instructions
 

  • In a skillet brown the beef in a little water or oil.
  • While beef is browning add the mushrooms, onion, garlic, oregano, thyme, bay leaf, salt and pepper to slow cooker.
  • Add cooked beef, beef broth and cooking sherry to slow cooker. Stir to combine.
  • Cover and cook on low for 8 hours or high for 4-5 hours.
  • A half hour before serving remove bay leaf and stir in sour cream. Sprinkle in the flour to thicken.
  • Turn slow cooker on high for 30 minutes.
  • Cook rice according to directions.
  • Serve scrumptious stroganoff over rice.

Notes

You can serve over noodles instead of rice.  It is also yummy over a baked potato or mashed potatoes.
